All the information that Apple has been privy to, now can be viewed by phone owners. It’s unclear what Apple does with the information. Not that they do anything with it yet, just collecting the information means it is in jeopardy, possibly used or hacked at some point-in-time.
This data is stored in an easily readable form on your machine. Any other program you run or user with access to your machine can look through it. There’s been hesitation to releasing this information, but there’s no real threat to snooping, for the spatial and temporal accuracy of the data has been watered down. As far as we know the location is determined by triangulating against the nearest cell-phone towers. This isn’t as accurate as GPS, but presumably takes less power. You might even see points on the map that the device has never been, tending to be intermittent glitches.

After syncing your device with your computer this information is saved on your machine, and can be accessed or deleted, but will remain on your iPhone or iPad.
